My spouse was gifted some sourdough starter. While I love bread, maybe too much, I also try to hit about 120g of protein a day and I just don’t know if daily focaccia is going to help me in this endeavor
Any ideas?
Starter is starter - you can use whole wheat flour from there to add protein, and then on top of that, look at seeded loaf recipes with whole wheat berries, pumpkin seeds, sesame seeds, flax, whatever!
Yes! Sourdough pancakes can include a lot of protein. I use a combination of ww + almond flour, oatmeal, flax/chia, eggs, chopped nuts. Cherish that starter!
You can make pizza dough with sourdough starter and get the protein through toppings. Here is a recipe by Paul Hollywood for sourdough pizza, with a little yeast thrown in to help it rise. “Strong white bread flour” is the same as bread flour, in case the “strong” throws you off.

Pretty much anything thats made with dough. Sky is the limit. In terms of a high protein food though bread flour has 4g for every 110 calories which isnt awful which isnt terrible and I dont know how yeast impacts protein content but you may wanna add a protein shake or some chicken breast to your day if you got that caloric goal to meet.
There is regional soup made from sourdough starter, eggs, mushrooms, potatoes and some more ingredients. If you want I will try to find and translate some recipes.
