    Thank you for this post! With the prices of meat skyrocketing we are considering more vegetarian meals but we’ve been struggling with carb-heaviness. Hopefully I can find something good in these cookbooks that can make up for it.

    Besides the ones in the article, I think these are also worth a look:

    • The Veganomicon - Lots of what I would consider “classic” vegan recipes
    • Veganize It! - A starter for converting meat recipes to non-meat versions

    Also just about any near- or far-east cookbook will probably have some vegetarian recipes in it. Get outside the US and Europe and the “meat with every meal” focus seems to decrease.

    Overtime I have gotten into the habit of eating vegetarian food more often, and the majority of what I cook is vegetarian. My girlfriend sees the lack of a main protein the reason she doesn’t feel satisfied with eating a vegetarian meal. Is there a good cookbook or resource that has recipes that can help satisfy that?
